I help many clients who suffer from multiple food allergies, sensitivities and/or intolerances and follow very specific dietary restrictions. While there are plenty of healthy products on the shelves these days , it is also nice to have a few recipes to keep on hand like this simple quinoa cracker.

Crustless Veggie Quiche

By nutritionbyerin On July 14, 2016 · Add Comment · In Breakfast, Low FODMAP, Main Entrees, Recipes, SCD Legal, Vegetarian
Quiche...it is one of my favorite breakfast and/or brunch recipes out there! The crust is typically the only part of the dish that I feel I could do without as it is typically just a mixture of flour and oil and doesn't offer any real health promoting properties. In this crustless veggie quiche recipe, I take away the crust and instead use sauteed veggies as the "base" of the quiche.

Grain-Free Coconut Pancakes

Grain-Free Coconut Pancakes

By nutritionbyerin On June 28, 2016 · 1 Comment · In Breakfast, Low FODMAP, Paleo, Recipes
This grain-free coconut pancake recipe came about as I was trying to figure out more breakfast ideas for my clients who suffer from multiple food sensitivity and/or allergy issues. Many of these people cannot consume grains and flour (particularly wheat), dairy, and processed sugar...all ingredients that are commonly found in typical pancake recipes. Additionally, this pancake is approved for someone on the low FODMAP diet as long as the pancake portion size is limited to 1 serving (1/2 of the recipe).

Grain Free Eggplant Pizza

Pizza is definitely one of my favorite comfort foods, however I don't always love how I feel after I indulge in a few slices. Not only is pizza typically loaded with heavy cheese, sugary red sauce, and fatty Italian meats, but also the amount of grain  in the crust can add up to equal over three servings per slice!

Gluten-Free Veggie Cake

Gluten-Free Veggie Cake

By nutritionbyerin On May 2, 2016 · Add Comment · In Breakfast, Paleo, Recipes, Side Dishes, Vegetarian
Whenever I "overdo" the fresh veggies I buy at the grocery store or farmer's market, I always try to come up with unique ways to use them before they inevitably rot away. I developed this dish as a tasty way to eat a lot of the foods I just had laying around in the kitchen! In my own attempt to eat a gluten-free diet, I used almond flour in replacement of regular flour. I didn't want to overwhelm any of the natural sweetness of the root vegetables, so I decided to just add a bit of sea salt and hold off any other herb or spice. Sometimes simple is best!

Q&A: What is the best fitness tracker to use?

By nutritionbyerin On July 9, 2015 · 1 Comment · In Articles, Fitness, Hot Topics
Fitness trackers are all the rage these days. Not too long ago I remember clip-on pedometers that counted your daily steps and often flew off your clothing after just a few minutes! Fitness technology has changed quite a bit, offering valuable device features like heart rate monitors, sleep trackers, movement reminders, and daily caloric burn calculations. These smart devices don't just look snazzy, but they are a great addition to your fitness efforts.

What’s the Scoop with Protein Powders?

What’s the Scoop with Protein Powders?

By nutritionbyerin On June 19, 2015 · Add Comment · In Articles, Hot Topics, Supplements
There is no doubt that protein is so IN right now! Not that it hasn’t always been IN, but it seems to be packed into our everyday foods…potato chips are now protein-crisps, granola bars are now muscle-boosting-protein-bars, and even our morning cereal has turned into protein-crunch bites! While I am very much on the pro-protein campaign, I thought it may be helpful to review with you why we need protein, how protein-products fit into our diets, and provide you with a few of my favorite protein-packed options.
