Banana bread is one of those desserts that easily passes as a quick breakfast as it at least provides some fruit to the diet! Many banana bread recipes add in chopped walnuts, chocolate chips, or other flavors/textures. In my recipe I added a berry twist! I tossed in wild blueberries and dried cranberries adding a unique tanginess to the banana bread. Yum.

Many of these people cannot consume grains and flour (particularly wheat), dairy, and processed sugar...all ingredients that are commonly found in typical pancake recipes. Pizza is definitely one of my favorite comfort foods, however I don't always love how I feel after I indulge in a few slices. Not only is pizza typically loaded with heavy cheese, sugary red sauce, and fatty Italian meats, but also the amount of grain  in the crust can add up to equal over three servings per slice!

Gluten-Free Veggie Cake

By nutritionbyerin On May 2, 2016 · Add Comment · In Breakfast, Paleo, Recipes, Side Dishes, Vegetarian
Whenever I "overdo" the fresh veggies I buy at the grocery store or farmer's market, I always try to come up with unique ways to use them before they inevitably rot away. I developed this dish as a tasty way to eat a lot of the foods I just had laying around in the kitchen! In my own attempt to eat a gluten-free diet, I used almond flour in replacement of regular flour. I didn't want to overwhelm any of the natural sweetness of the root vegetables, so I decided to just add a bit of sea salt and hold off any other herb or spice. Sometimes simple is best!
