Gluten Free Tabbouleh Salad

Tabbouleh is a vegetarian dish that typically contains bulgur (cracked wheat) along with fresh herbs, tomatoes, lemon and oil. It's amazingly flavorful and light, and makes for an excellent side dish to a complete Mediterranean style meal. I decided to remake this classic salad, but use cooked quinoa to replace the bulgur wheat so that it could be gluten free.

Most people have a favorite snack bar that they can find fairly easily at the grocery store, but it can be challenging to find one that is free of many high FODMAP ingredients. For instance, many snack bars contain inulin, chicory root, corn syrup, honey, agave, cashews, pistachios, dates, and/or sugar alcohols. While most of those ingredients are considered generally healthy, they also contain highly fermentable carbohydrates that can promote gastrointestinal issues.

So, when you make this recipe, make sure to add just a hint of the aquafaba to the veggie burger mixture so that it holds on tight. The other trick for making a vegan veggie burger patty not crumble is to cool the batter. Whenever I "overdo" the fresh veggies I buy at the grocery store or farmer's market, I always try to come up with unique ways to use them before they inevitably rot away. I developed this dish as a tasty way to eat a lot of the foods I just had laying around in the kitchen! In my own attempt to eat a gluten-free diet, I used almond flour in replacement of regular flour. I didn't want to overwhelm any of the natural sweetness of the root vegetables, so I decided to just add a bit of sea salt and hold off any other herb or spice. Sometimes simple is best!
