Simple Crunchy Green Beans

Ingredients
  1. 1lb fresh green beans, washed and trimmed
  2. 2tbsp cold pressed extra virgin olive oil
  3. 2tbsp coconut aminos, soy sauce, or tamari (depending on personal preference and/or dietary restrictions)
  4. 1/4 tsp black pepper
  5. 2 medium raw garlic cloves, minced or pressed
Instructions
  1. Boil 4-6 cups of water in a medium pot. Meanwhile, set up a strainer and a large bowl of cold water with a handful of ice cubes.
  2. Blanch green beans by adding them to boiling water for ~60 seconds (or until they turn bright green).
  3. Quickly strain the green beans and then place in ice water to flash-cool.
  4. Meanwhile, mix together the other ingredients.
  5. Strain and pat dry the cooled, blanched green beans. Add them to the garlic mixture and toss until well combined.
