Growing up I hated green beans! They were typically overcooked and flavorless. I developed this recipe to keep the crunchy green bean texture in tact with a pop of flavor! Try this recipe for a simple side dish or even a crunchy/salty healthy snack alternative.
Simple Crunchy Green Beans

Ingredients
- 1lb fresh green beans, washed and trimmed
- 2tbsp cold pressed extra virgin olive oil
- 2tbsp coconut aminos, soy sauce, or tamari (depending on personal preference and/or dietary restrictions)
- 1/4 tsp black pepper
- 2 medium raw garlic cloves, minced or pressed
Instructions
- Boil 4-6 cups of water in a medium pot. Meanwhile, set up a strainer and a large bowl of cold water with a handful of ice cubes.
- Blanch green beans by adding them to boiling water for ~60 seconds (or until they turn bright green).
- Quickly strain the green beans and then place in ice water to flash-cool.
- Meanwhile, mix together the other ingredients.
- Strain and pat dry the cooled, blanched green beans. Add them to the garlic mixture and toss until well combined.
