greenbeans Growing up I hated green beans! They were typically overcooked and flavorless. I developed this recipe to keep the crunchy green bean texture in tact with a pop of flavor! Try this recipe for a simple side dish or even a crunchy/salty healthy snack alternative.

Simple Crunchy Green Beans

  1. 1lb fresh green beans, washed and trimmed
  2. 2tbsp cold pressed extra virgin olive oil
  3. 2tbsp coconut aminos, soy sauce, or tamari (depending on personal preference and/or dietary restrictions)
  4. 1/4 tsp black pepper
  5. 2 medium raw garlic cloves, minced or pressed
  1. Boil 4-6 cups of water in a medium pot. Meanwhile, set up a strainer and a large bowl of cold water with a handful of ice cubes.
  2. Blanch green beans by adding them to boiling water for ~60 seconds (or until they turn bright green).
  3. Quickly strain the green beans and then place in ice water to flash-cool.
  4. Meanwhile, mix together the other ingredients.
  5. Strain and pat dry the cooled, blanched green beans. Add them to the garlic mixture and toss until well combined.
