Mac n cheese, a classic comfort food dish, is not only delicious, but can also be nutritious with a few little tweaks to the recipe! This recipe is packed with flavor without all of the fat and calories you typically find in convenience mac n cheese options (frozen or boxed).
Ingredients
- 1 box of high protein macaroni noodles
- 1 cup low fat ricotta cheese
- 1 cup low fat cottage cheese
- 1 cup shredded cheddar cheese
- 2 cup frozen mixed veggies (peas, corn, string beans, etc.)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp turmeric
- 1/2 tsp garlic powder
- 1/2 tsp paprika
Instructions
- Boil the pasta noodles according to package directions. Strain the noodles and place back in the pot.
- Meanwhile, mix all of the spices together in a small bowl.
- To the warm, cooked pasta noodles add the spice mixture, cheeses and veggies and mix until well combined.
