This festive potato salad is a great side dish to offer if you’re planning to host or attend a Memorial Day party this year. This delicious recipe will WOW everyone with it’s classic flavor and beautiful, patriotic colors. And, don’t feel guilty about eating potatoes– they are loaded with vitamin B6, potassium, vitamin C, antioxidants and fiber. I like to buy the “red, white and blue” potatoes, but feel free to just use one color if you can’t find the variety bag at the store.

Ingredients
  1. 1 package of red, white, and blue potatoes, quartered
  2. 4 hard-boiled eggs, whites cut into 1/2-in pieces
  3. 1/2 cup low-fat, olive oil mayonnaise
  4. 1 tsp apple cider vinegar
  5. 1 tsp sugar
  6. 1 medium Vidalia onion, chopped
  7. 2 celery ribs, chopped
  8. 1/4 cup fresh parsley, minced
  9. Sea salt and black pepper to taste
Instructions
  1. Place potatoes in a large pot and cover with water. Bring to a boil, reduce heat, cover and simmer for 12-14 minutes, or until tender.
  2. Cool the boiled potatoes for at least 30-minutes.
  3. Meanwhile, combine mayonnaise, vinegar, sugar, salt and pepper in a large mixing bowl.
  4. Add the potatoes, egg whites, onion, celery, and parsley; toss to coat.
  5. Cover and refrigerate for 2 hours. Serve chilled.
