Beet, Apple, Gingery-Lime Salad

Ingredients
  1. 2 cup shredded, raw beets (clean and peel prior to shredding)
  2. 2 cup shredded, raw Granny Smith apples (skin on)
  3. 3 tablespoons extra virgin olive oil
  4. 2 teaspoons freshly grated ginger root
  5. 3 tablespoons freshly squeezed lime juice
  6. 1 pinch Celtic sea salt
Instructions
  1. In a large mixing bowl, combine the shredded beets and apples.*
  2. In a small bowl, mix together the oil, ginger, lime juice and salt.
  3. Pour the dressing over the salad and toss together until well combined.
  4. Garnish with a hint of lime zest.
