Antioxidant Boosting Summer Smoothie

Good news…it’s smoothie time!! Early summer is a time when the berries are super fresh and bursting with color and flavor. I don’t know about you, but I am often craving something like this antioxidant boosting summer smoothie to help me wake up in the morning. Smoothies are not only cool and refreshing, but also convenient when you are on-the-go and still trying to keep up with healthy eating practices. This easy and delicious dairy-free recipe is packed with flavor and nutrients, but without all of the added sugar and calories that often go into most smoothie recipes.

By using a variety of colors, this smoothie is packed with antioxidant boosting ingredients. Strawberries and blueberries are rich in anthocyanins, flavonols, and vitamin C which help to improve the immune system and protect the body against inflammation. Spinach is packed with B-vitamins, vitamin K, and minerals like iron, magnesium and calcium. Combining spinach with vitamin-C rich fruits like strawberries, blueberries and lime juice helps improve the absorption of its minerals.

Both bananas and avocados contain high levels of heart healthy potassium and also help to add creaminess to the texture of this smoothie. I like to freeze my bananas after they ripen by peeling them, chopping them in half, and then wrapping them in foil and placing in the freezer for later use.

Throw all of the ingredients into the blender (I like my Ninja blender) with 8-10oz of filtered water and a handful of ice cubes. Blend for about 60-seconds or until all of the ingredients are completely combined and smooth. There you have it! You could also add a bit of unflavored or vanilla protein powder to this smoothie if you are looking for more a meal replacement.

Ingredients
  1. ½ large frozen banana
  2. ¼ ripe avocado
  3. 1 ½ cup raw organic baby spinach
  4. ½ cup organic blueberries
  5. 1 cup sliced organic strawberries
  6. ½ lime, juiced
  7. 8oz filtered water
  8. 4-5 ice cubes
Instructions
  1. Add all ingredients to a blender.
  2. Blend until well combined, for about 2-minutes.
  3. Serve and enjoy!
